DETERMINATION OF ANTHOCYANINS, TOTAL PHENOLS AND ANTIOXIDANT CAPACITY OF RUBUS ROBUSTUS C. PRESL

Natural antioxidants, such as fruits and vegetables, can neutralize an excess of free radicals in the organism prevent certain degenerative diseases. Blackberries are known to exhibit antioxidant properties, but this fruit is seldom consumed or commercialized Peru. The objective research study was determine total anthocyanins (TA), phenolic compounds (TPC) capacity lyophilized Rubus robustus C. Presl (wild blackberries) region Arequipa - pH-differential method, Folin- Ciocalteu method radical 2,2-diphenyl-1-picrylhydrazyl hydrate (DPPH) were used end. Results showed a TA content 52 ± 1.86 mg cyanidin 3-glucoside/100 g Presl. Furthermore, TP 219.11 8.23 gallic acid/100 fruit. percentage DPPH discoloration two samples (1.0 2.0 mg/mL) determined, obtaining 35.89 4.43 67.23 3.30%, respectively. IC50 value found 1.5 mg/mL. Wild blackberries Arequipa, Peru therefore shown possess capacity, so diet rich type should be promoted nutraceutical.
